I love gingerbread. Jim, however, calls it an “abomination,” and no one else in the family likes it. (Sigh. The burdens.) This recipe results in a thin batter, which, in turn, results in a well flavored and moist gingerbread. I use normal molasses, not the robust flavored kind. It’s an easy recipe to make, and it always gets compliments. Most people are pleasantly surprised at how moist the gingerbread is.
